Where was Rocky Road First Made

Whoever came up with the modern day rocky road was a genius.

The origin of where rocky road was first made is debatable. Apparently, the earliest mention of it dates back to 1853 in Australia. Rocky Road was supposedly created as a way to sell confectionery that had spoiled during the long trip from Europe.

These sweets were mixed with local nuts along with cheap chocolate to disguise the flavour.

The wording Rocky Road comes from the rocky roads that gold miners used to reach various gold fields, or so the story goes………

Tip

There are umpteen variations of rocky road and the great thing about making rocky road is you can really put pretty much whatever you like into the mix.

Whatever combinations you choose try to think about how the colours and textures work together.

We’ve used a selection of white chocolate with pink and white marshmallows, raspberry jellies, toasted macadamia nuts, toasted pistachios, shredded coconut, cranberries and Turkish delight.

Mix It Up

You can use any type of jelly lollies such as snakes, jelly mint leaves, jelly babies, sour gummies……you get the picture.

Switch the nuts for cashews, brazil, walnuts, pecans, almonds, hazelnuts or even pine nuts. Just be sure to toast them before using.

Marshmallowsand coconut are really non-negotiable.

Using marshmallows in rocky road gives a glorious soft texture. Mind you there are marshmallows, and marshmallows. In our books what makes a great marshmallow is one that has a slight chew to them, yet are soft and pillowy with great flavour.

Turkish delight comes in many flavours, we used a mixed box with orange, rose and vanilla.

Switch the cranberries and use dried apricots, pears, blueberries, glace cherries, dried mango, golden raisins, or even muscatels.

What Chocolate To Use

We made our Rocky Road using good quality white chocolate. Milk or dark chocolate can be used, but we loved how the colours offset with the white chocolate.

You could also split the lolly and nut mixture in two and pour white chocolate into one bowl and milk, or dark chocolate into the other for a lovely two toned effect.

Whichever chocolate you decide to use try to buy the best quality you can afford to get the most flavour and mouth feel. Sure you pay a little more for quality chocolate, but this is one time you don’t want to stint on the quality.

White Chocolate

White chocolate tends to be harder to work with than dark, or milk as its not real chocolate. White chocolate is a combination of sugar, milk, cocoa butter, vanilla and fat.

White chocolate doesn’t melt as easy as milk or dark chocolate as it has a lower melting point.

None the less if you follow our simple instructions you’ll have melted white chocolate with no problems.

How To Melt White Chocolate On The Stove

  • heat some water in a pot over medium heat until just simmering
  • cut chocolate into small sized pieces
  • place chocolate in a heat proof bowl (either glass or metal) that fits over the top of the saucepan
  • make sure the bottom of the bowl doesn’t come into contact with the water
  • reduce the heat to low
  • gently melt the chocolate using a spatula to move the pieces through the chocolate once it starts to melt
  • once chocolate is melted remove the bowl from the heat

Remember that chocolate will melt in your hand, so it really doesn’t need to be boiling madly to melt the chocolate.

Does Rocky Road Need To Be Kept In The Fridge

Rocky road is happy to not be refrigerated. As we live in a particularly hot climate we like to keep it refrigerated simply to stop the chocolate from melting. Your call!

How Long Does Rocky Road Candy Bar Last

Our Rocky Road is quite happy stored in the refrigerator in an airtight container with pieces of kitchen paper in between layers for a month or more.

Remember the keeping quality will be determined by the ingredients you have added to your Rocky Road. Using a homemade marshmallow for example, wouldn’t keep as long as the commercially made marshmallow which has a long shelf life. You get the idea, keep the Rocky Road as long as the shelf life of your ingredients.

Can I Freeze Rocky Road

Rocky Road can be frozen either unsliced in the tray you set it in, or cut into pieces. Either way wrap well in plastic wrap, then cover with foil.

Defrost in the refrigerator overnight.

Rocky Road Vanilla Ice Cream

One of our favourite ways to use Rocky Road Candy Bar is to cut it up into quite small pieces and mix through ourQuick No Churn Vanilla Bean Ice Cream or use a good quality store-bought ice cream.

If making our vanilla ice cream simply fold the rocky road through before freezing.

If using a store-bought vanilla ice scoop the frozen ice cream into a bowl and just let it soften a little then mix through the rocky road and refreeze. Too easy!

White Chocolate Rocky Road Candy Bar is sinfully indulgent. Just the thing to make for the holidays, and to wrap into a pretty package as a host gift.

Ingredients

  • 600 g white cooking chocolate ( 1 1/4 pound)
  • 50 g large pink and white marshmallows (2oz)
  • 400 g raspberry jelly lollies (14 ounces)
  • 100 g macadamia nuts (3 1/2 ounces)
  • 100 g shelled pistachio nuts (3 1/2 ounces)
  • 1/2 cup shredded coconut
  • 300 g rose turkish delight (10 ounces)
  • 1 cup dried cranberries
  • 24 x 30 cm (9 1/2 inch x 12 inch) baking tin lined with plastic wrap

Instructions

  • roast macadamia and pistachio in oven 180 c (350 f) for ten minutes, or until a light golden brown
  • cut turkish delight and marshmallows in half
  • over a low heat melt the chocolate in a bowl over a pot of gently simmering water (don't let the water hit the bottom of the bowl.
  • pour nuts and all other ingredients into a bowl
  • pour melted chocolate over ingredients and mix thoroughly
  • spoon into baking tray, cover and refrigerate for a couple of hours or until set
  • use a long sharp knife to cut into squares
  • serve and enjoy!

  • rocky road keeps for ages in an airtight container in the refrigerator
