I love cooking for Thanksgiving. Even if we plan to go to a relative’s house on the actual holiday, I will still make a full dinner with all the fixings on a different day of the week.

For years, I always made my turkey with salt, pepper, thyme, and rosemary. I still makeRosemary-Thyme Turkey Cutlets regularly for weeknight dinners, but have upped my Thanksgiving turkey game a bit.

One of my favorite food combinations is pairing fruit with meat. Cranberry and turkey are a classic combination, and for good reason, but I wanted to do something a little different.

Strawberry and basil pair so well together and turkey is the perfect savory base.

Why This Recipe Works

  • Strawberry and basil taste amazing together. Turkey pairs well with fruits and chutneys so this is the perfect combination of flavors!
  • It’s different and unique, but simple to make. Sometimes change is good!
  • This turkey recipe can be enjoyed any night of the week. You can also double or triple the recipe if you’re making a much larger turkey for the holidays.

How to Make Strawberry Basil Roasted Turkey

Making the turkey is incredibly easy. I use a 3-pound turkey breast for this recipe. If you’re making a whole turkey I would recommend doubling or tripling the ingredients depending on the size.

Prep!

Rinse your turkey and pat dry with paper towels.

Warm the strawberry jam in a small saucepan over medium heat until it thins out. This makes it much easier to spread onto the turkey.

Using a silicone brush, cover the turkey in the warm jam.

Sprinkle on the chopped fresh basil.

You can warm some additional jam to drizzle onto the turkey after it is sliced and/or plated. Garnish with extra fresh basil, if desired.

Tips and Techniques for the Best Strawberry Basil Roasted Turkey

  • If you are using a boneless turkey breast, as I have, be sure to leave the netting on until after it is finished roasting. The turkey may fall apart while baking if you remove it ahead of time.
  • Warm the strawberry jam to make it much easier to spread evenly onto the turkey.
  • Store leftover turkey in an air-tight container in the refrigerator. Use within 3-4 days.

FAQ’s

  • At what temperature is turkey done cooking? The internal temperature of turkey should reach 165°F in the center when measured with a food thermometer.
  • How long should a turkey rest before slicing? You should let your turkey rest about 20 minutes before slicing it to allow the juices to disperse more evenly.
  • Can you freeze cooked turkey? Yes, absolutely! Turkey freezes and reheats very well. Be sure to freeze turkey in an air-tight container or in freezer bags without the bones. Use within 3 months for the best results.

Roast 1 hour, then baste every 30 minutes with pan liquids, until an instant-read thermometer inserted into the thickest part of thigh (avoiding bone) registers 125°F, about 3 hours. Remove foil; raise oven heat to 400°F. Continue roasting, basting occasionally, until thigh reaches 180°F, 45 to 60 minutes more.

Should you bake a turkey covered or uncovered? ›

To achieve a perfectly golden, juicy turkey, let the bird spend time both covered and uncovered in the oven. We recommend covering your bird for most of the cooking time to prevent it from drying out; then, during the last 30 minutes or so of cooking, remove the cover so the skin crisps in the hot oven.

How do you keep turkey from drying out when cooking? ›

“When roasting the whole bird, the key is to cook the legs longer than the breast," Tommy says. "Once the breast is cooked, remove the bird from the oven, remove the legs and then put them back in. This stops the breasts drying out."

Is it better to cook a turkey at 325 or 350? ›

Oven-Roasted Turkey

We recommend starting the turkey in a 425 degree oven for 30-45 minutes before tenting the pan with foil and lowering the temperature to 350 degrees until a meat thermometer reads 165 degrees when inserted into the thickest part of the bird.

Should I put butter or oil on my turkey? ›

Don't butter your bird

Placing butter under the skin won't make the meat juicier, though it might help the skin brown faster. However, butter is about 17 percent water, and it will make your bird splotchy, says López-Alt. Instead, rub the skin with vegetable oil before you roast.

Do you put water in the bottom of the roasting pan for turkey? ›

Place roast, skin side up, on a flat roasting rack in 2-inch deep roasting pan. Do not add water to pan. Roast uncovered according to Cooking Schedule or until meat thermometer in center of breast roast reaches 170° F and in center of turkey roast reaches 175° F.

When should I prepare my turkey for roasting? ›

Don't forget to defrost. Always ensure a frozen turkey is fully thawed (in the refrigerator, please; about 24 hours per every 5 pounds) before attempting to cook it. A partially thawed turkey can seriously throw off roasting times—and without thawing, you won't be able to remove the giblets.

Why is my turkey so tough? ›

While this is caused by overcooking the turkey, it sometimes seems that some birds are just made dry. Step one in dealing with dry turkey is to fill a spray bottle filled with warm chicken stock and spray it over the meat as you carve it (it's best to keep this secret).

How does Bobby Flay roast a turkey? ›

Put the turkey on top of the vegetables, put in the oven and roast in the oven for 45 minutes, or until lightly golden brown. How do you keep turkey meat moist? ›

If you let the turkey rest a bit, the juices reabsorb into the meat rather than running out of the bird and landing on the cutting board. Carve it to order. The longer you let it sit after you slice it, the drier it will be. If you need to slice it, cover it with foil or plastic wrap to keep it from drying out.

Does salt help keep a turkey moist? ›

Since there's no water, salting doesn't increase the amount of water in the turkey to start, but the salt diffuses into the muscle tissue and breaks down some of its proteins, which helps it retain more water during cooking and seasons this seasonal treat.
