Ingredients
- 6 6 eggeggs
- salt and pepper
- 1 tbsp 1 tbsp chopped fresh basil or 1 tsp dried basil
- 2 tbsp 2 tbsp olive oil
- 3 oz. 85 g cherry tomatoes cut in halves or tomato cut in slicestomatoes cut in slices
- 5 oz. (1¼ cups) 140 g (300 ml) fresh mozzarella cheese, diced or sliced

Making low carb simple
Instructions
Crack the eggs into a mixing bowl, add salt and black pepper to taste.
Whisk well with a fork until fully combined. Add basil and stir.
Heat oil in a large frying pan over medium heat. Fry the tomatoes for a few minutes.
Pour the egg batter over the tomatoes. Wait until the batter is slightly firm before adding the mozzarella cheese.
Lower the heat and cook until the omelet has set. Serve right away and enjoy!

I haven't made this recipe yet. It is on one of the meal plans and the shopping list did not specify fresh mozzarella, only 1/3 pound mozzarella. I did not purchase the fresh mozzarella when I went to the store, so now I have to go back to the store to get the correct ingredients! I am looking forward to making and enjoying this recipe.

This is delicious. I also fried up a little garlic with the tomatoes and added red pepper and grated parmesan cheese to the egg mixture and it had really great flavor. Definitely recommend this recipe.

I found this recipe a bit bland too much mozzarella. Next time I'd add pesto and pecorino or cheddar.

Did with dried Oregano as didn't have any Basil. Very tasty and super quick. Will have again (probably stick with the oregano too)

Love love love this recipe! I didn’t have basil so I used a little “every thing bagel” seasoning and shredded mozzarella cheese. Great texture great taste and a quick dish to make!

Please help. This omelette has 4g carbs per serving. How does that work out as the tomatoes and basil are the only item with carbs and for one serving 45g tomatoes doesn’t add up to 4g carbs everywhere I look.

I just had this for my first meal of the day, about 1:30 pm. I was confused by the references to "fresh mozzarella". I have never seen, been aware of, or used anything but factory mozzarella. I had to research the difference. Now I am anxious to see if my grocery store here in Oregon, USA, has it. I enjoyed this very much. Next time I might add the mozzarella cubes after I take the omelet off of the heat, so they melt a little but are still tasty pockets of cheese, instead of completely melting.

I think this is the best omelette I’ve ever made! I added about a tablespoon of spanish onion and a couple of salami slices chopped in addition to the other ingredients. Also used fresh basil and mozzarella and then put the pan under the grill to melt the cheese! Yummo!
