Make This Gluten-Free Lemon Olive Oil Cake For a Tummy-Friendly Treat

If you have digestive issues and need to avoid gluten for any reason, your dessert options can sometimes feel limiting. But when it comes to gluten-free desserts, this insanely delicious Lemon Olive Cake takes the, uh, cake. It’s richly flavored and totally satisfying, but also lightly sweet and airy.
The best part about this gut-friendly recipe? It's made with just twelve ingredients! Created by dietician Desiree Nielsen for her cookbook Good For Your Gut, this recipe delivers a healthy dose of protein and fiber while also being irresistibly yummy.
Good For Your Gut
Ingredients:
- Coconut or olive oil, for greasing the pan
- Zest and juice of 2 lemons
- 1 can (14 ounces/398 mL) white beans, rinsed and drained
- ⅔ cup (150 mL) pure maple syrup
- ½ cup (125 mL) extra-virgin olive oil
- 2 tablespoons (30 mL) unsweetened oat or soy milk
- 1 tablespoon (15 mL) pure vanilla extract
- ¼ teaspoon (1 mL) almond extract
- 2½ cups (625 mL) almond flour
- ½ cup (125 mL) gluten-free all-purpose flour
- ¼ cup (60 mL) ground flaxseed
- 2 teaspoons (10 mL) baking powder
- ½ teaspoon (2 mL) salt
Good For Your Gut
Directions:
- Preheat the oven to 350°F (180°C). Grease an 8-inch (1.2 L) round cake pan with coconut oil. Line the bottom of the pan with a circle of parchment paper.
- In a high-speed blender, add the lemon zest, lemon juice, white beans, maple syrup, olive oil, oat milk, vanilla, and almond extract. Purée until smooth, about 1 to 2 minutes.
- In a large bowl, whisk together the almond flour, all-purpose flour, flaxseed, baking powder, and salt. Add the wet ingredients to the dry ingredients and stir to blend. Pour the batter into the prepared cake pan and smooth the top. Bake for 45 minutes, until the cake is lightly golden on top and a toothpick inserted into the centre of the cake comes out clean. A bit of cracking is normal. Let the cake cool in the pan for 10 minutes. Invert the pan over a plate and tap the bottom to dislodge the cake. Transfer the cake to a rack to cool completely before slicing. Store loosely covered on the counter for up to 4 days.

I'm not going to lie, I've eaten a lot of avocado pasta over the years. I discovered it during a time when I was trying out the Mediterranean Diet, and it quickly became a go-to weeknight dinner option for me. Because it's made with avocado, it's creamy, rich, and delicious — but also super nutritious. There's a reason it's become such a beloved recipe for anyone who wants to eat wholesome, delicious pasta recipes but also wants a good dose of nutrients.
Before we dive into the recipe, here are a few reminders about why avocados are so good for you: First, avocados are chock-full of healthy fats, mostly of the monounsaturated variety. These fats are great for your heart health and can help keep your cholesterol levels in check. Plus, they give your skin that fabulous glow we all crave! Avocados are also bursting with fiber, which is fantastic for your digestive system. It keeps things moving along smoothly and helps you feel fuller for longer, making it a perfect addition to any meal.
As for the vitamins and minerals, avocados are loaded with potassium, which is essential for maintaining healthy blood pressure levels and keeping your muscles functioning properly. They're also packed with vitamins C, E, K, and B-6, as well as folate, all of which are vital for overall health and well-being.

Tangy Avocado Pasta Recipe
Ingredients:
- 2 avocados
- 2 tbsp lime juice
- 1/4 cup chicken stock
- 1/8 cup sunflower seeds
- 5 cloves garlic
- 1/2 tsp cumin
- 1/4 cup cream cheese
- 1/2 cup fresh cilantro
- 1/2 tsp salt
- 1/4 tsp pepper
- 12 oz pappardelle pasta
- optional: chili flakes & lime garnish
Directions:
- Prepare your pasta of choice according to box directions. We used pappardelle pasta, but you can swap in gluten-free pasta for this recipe too!
- While the pasta is boiling, prepare the sauce. Add all of the ingredients (except pasta) to a blender or food processor. Blend for 1 minute.
- After the pasta is strained, return it to the pan or in a bowl and add the avocado sauce. Gently fold the pasta and sauce together until well combined.
- Serve with a generous sprinkle of chili flakes and a lime garnish.

Are you as obsessed with Trader Joe’s“Everything But the Bagel” seasoning as I am?! It’s a magical combination of salt, garlic, onion, poppy seeds, and two kinds of sesame seeds, and when it hit shelves people went absolutely nuts for the stuff (myself included). I mean, how could you not? As a kid, I’d order an everything bageland shake it to collect the extra seasoning so I could scoop it up into the cream cheese, and have that flavor explode in every single bite.
This seasoning has such a great flavor and really does make everything — and I mean *everything* — taste good! It’s sweet and savory, and has a little spice from the garlic and a nice crunchy texture. Plus, it evokes that lovely nostalgic memory of tearing into your first fresh-out-of-the-oven everything bagel with a thick layer of schmear.
And while you have your traditional uses for this superb spice mix, here are a few other inspired ideas that become even better with a sprinkle of Everything But The Bagel seasoning.
Uses For Everything Bagel Seasoning From Trader Joe's
- Avocado toast is still all the rage, so next time you’re craving it, try topping it with some everything bagel seasoning. Add a pinch of red chili flakes for a nice, spicy kick.
